So for years, much to the chagrin of my parents, most of my food couldn’t have any “random” things in it. No green onion or celery in the potato salad or egg salad sandwiches, no peppers in my omelets ( a western or Denver omelet would surely cause a state of convulsion), even my tomato or pizza sauce had to be pureed so that all the lumps were out of it ,so a sandwich like this one which is basically chicken with ALL the random things added to it would never have been on the menu.
Well fast-forward to today and I am glad to say that I got over that fear of “stuff” in my food and in my mind have found what is quite possibly one of the best “salad” sandwiches (chicken, egg, tuna alike) on the planet!!

Chicken Salad Sandwich

Ingredients
- 3 cups (8oz cooked) chopped chicken breast
- 1/2 cup diced red onion
- 1/2 cup diced apple
- 1/2 cup grapes, halved
- 1/4 cup dried cranberries
- 1/4 cup slivered almonds
- 2/3 cup 2% plain Greek yogurt
- 1 tbsp freshly squeezed lemon juice
- 1/2 tsp garlic powder
- kosher salt and freshly ground pepper to taste
- 4 large lettuce leaves
- 8 slices of bread (I like to use Country Harvest Ancient Grains & Red Fife )
Directions
- in a large bowl, combine all of the ingredients except the lettuce and the bread
- put 1/4 of the mixture onto a slice of bread. top with 1 lettuce leave and another piece of bread
