Spinach, Apple and Pecan Salad

Ingredients
- 3 tbsp olive oil
- 1 1/2 tbsp cider vinegar
- 1 tbsp dijon mustard
- 1 tbsp sugar
- 1/2 tsp salt
- 1/4 tsp fresh ground black pepper
- 1 apple halved, cored, thinly sliced (golden delicious preferred)
- 1/4 cup red onions cut into strips
- 3/4 lbs fresh spinach, washed, stems removed
- 1/2 cup toasted pecans
Directions
- In serving bowl, whisk oil, vinegar, Dijon mustard, sugar, salt and pepper until thick
- Add apples and onion and toss until coated with dressing
- place spinach on top and then pecans
- Toss just before serving
I really enjoy this recipe 😊 I have tried cutting the apples several different ways and I find that I like julienne style (long thin strips like matchsticks) the best. I also find that I prefer Granny Smith apples instead of the golden delicious, but both types still taste really good. Don’t be afraid to crumble some Feta cheese over the top of the salad once it has been tossed. Feta is a great pairing with spinach and apples.
